Tasting Note
With a pink petal color, our ROOTSTOCK 2018 is a very pale rosé. The nose reveals aromas of white apricot and peach flowers. The palate is fresh and round, with a slightly salty and floral finish
Terroir
Cassis was the first appellation in Provence recognized as AOC in 1936. It extends over just 200 hectares, planted in terraces overlooking the sea. The soils are mostly clay-limestone and shallow on the cliffs, where white wines are produced, and marly and deeper on the plateau, where rosé and some rare red cuvées are produced.
Winemaking
Direct pressing of the grapes - 24 hours setting at cold temperature at 8°C - Fermentation in stainless steel tank at 16°C - No malolactic fermentation - Aging on fine lees for 6 months - Filtration and bottling
