Paul Walace Brave Heart Pinot Noir
The name is a tribute to William Wallace, a man of great principle and heart, who we would like to believe is one of our ancestors. It is also a play on the Pinot Noir cultivar’s nickname – the Heart Break grape.
The Brave Heart Pinot Noir proudly introduces itself with a bright ruby red colour enticing you to explore it further. Fresh primary fruits, wafts of sour red cherries, strawberries and mulberries on the nose follow through onto a fruit driven palate. The purity of fruit is embellished by subtle oaking (20% new wood, 45% second fill, 35% third and fourth fill) and spicy undertones typical of the Elgin region. The new barrels were sourced from the Francois Frere and Mercurey cooperages in Burgundy, France.
Serve the Brave Heart with plum-glazed duck, roast turkey or a beautiful side of salmon. It is recommended that in our hot summer months you serve this wine ever so slightly chilled.
