The Cabernet Franc
This wine is a 100% Cabernet Franc wine with all of the grapes coming from the Estate. On the nose you have flint, red plums and Fynbos. On the palate you have a more grippy tannin structure with dark berries, cedarwood and roasted peppers. The wood is nicely integrated and gives the wine a good ageing potential
After harvesting the grapes the must has been cold soaked for 7 days at a temperature of 7°C. Thereafter it was fermented for 8 days in open concrete tanks with 5 punch downs a day. Finally, the wine was oaked for 12 months in French and European Oak barrels. After 12 months only the best barrels were chosen to make up the components for The Cabernet Franc by maturing it another 6 month in barrels. The wine was in the end matured for a total of 18 months in 60% 1st fill and 40% 2nd fill
Chicken tomato curry, fried duck breast with orange sauce, smoky vegetables and turkey with a nice gravy accomplished with cranberries works well with this wine.
Drinking well now, but perfect after aging another 3-5 years. Can easily age up to 10-15 years.
